Our favourite nutritious and easy-to-make breakfast
We can not get enough of porridge! As we always have oats at home, this recipe is our ultimate solution to create a quick and easy breakfast which will fill you up for the next couple of hours after waking up.
Vegan, no added-sugar, naturally sweetend with fruits and plenty of healthy ingredients. We always love to try out new variations of that recipe – using seasonal fruits, different type of nuts and dried fruits. Basically, if you let your creativity flow, you will never get bored with that superfood porridge. We will share with you now one of our favourite version.
Ingredients:
- 1 large ripe banana, peeled and sliced
- 1 cup rolled oats
- 2 tablespoons chia seeds
- 2 cups planted-based milk of your choice (rice, oats, almond, coconut etc.)
- 2 teaspoons cinnamon
- 1 tablespoon almond flakes
- 5 dates, pitted and chopped
- 1 tablespoon of vegan protein powder (optional)
- 2 small apples
Method:
1. Place the sliced bananas, oats and the milk into a large pot over a medium heat.
2. Add the chia seeds, the almond flakes, the protein powder and 1 teaspoon of cinnamon into the pot. Simmer for 4-5 minutes and stir it often to get a smooth, creamy porridge. Add extra milk, if needed.
3. Chop the dates into small pieces, grate the apples and mix it altogether with the other teaspoon of cinnamon. Serve the porridge in bowls and top it with the apple mix. Enjoy!
